Due mainly to my crazy computer and partially to my crazy Christmas schedule I have been absent for much of the past 2 weeks. However, even though my Christmas schedule is gearing up my computer problems have been handled and I am back on track here!
I hope y'all are having joyful preparations for the next few weeks. With that in mind I wanted to make an easier Oreo Cake for the holidays. I love the Oreo Cake recipe on my recipe page, but with a time crunch I need something faster and easier and I thought you might too. So, here it is! I tested it at a ladies "Christmas Desert Evening" and it was a smash hit. It's as wonderful as the original was and you will send people raving about how amazing you are! :o) It takes one whole package of original Oreo cookies to make it, you know that has to be good.
Preheat the oven to 350 degrees.
Cut 10 of your Oreo cookies in half. I suggest doing this first so if one breaks you can make it part of the 15 in the cake ingredients list and keep your 20 halves that look the best. You could also decorate with whole Oreos on the side and one in the center to skip this step.
Cake Ingredients:
1 box of yellow or white cake mix of your choice (disregard the instructions on the box)
3 eggs
2 tsp real Vanilla Extract
1 stick of butter (1/2c.)
3/4 c. milk
15 Oreo Cookies roughly broken up
Mix them all together by hand (to keep the cookies from further breaking up) and put in 2-8" or 2-9" pans that have been greased and floured or sprayed with Baker's Joy. 30 minutes for the 8" pans, 26 minutes for the 9" pans. Remove from the oven and allow them to cool for 10 minutes before turning them out to cool completely.
Whipped Topping Ingredients:
4c. of cold Whipping Cream (1qt or 32oz.)
tsp of Vanilla
1/2c. sugar
13 Oreo Cookies crushed
Beat all together with an electric mixer until the cream has become a stiff enough consistency to spread on your cake without fear of it running off, it only takes a few minutes.
When the Cake has completely cooled put on the Whipped topping and decorate with the 10 remaining Oreos. I took this cake unassembled to the event and put it together in about 5 minutes with a knife and a large tipped icing bag. I put the knife and bag in the bowl and put the lid on it for traveling back home. I don't like traveling with an assembled cake. It is courting disaster.

ReplyDeleteThanks Winnie! It's actually really easy to decorate, just ice it and use an icing decorating bag with a really big tip and oreos cut in half. If you mess up with the tip you can scrape it off and no one will notice. The oreos cover imperfections too. :o)
