This is one of our favorite quick desserts! My sister-in-law made them years ago at our house and I had to have the recipe. It's simple and delicious. I love the chewy Old Fashioned oats in it too, but I love oatmeal in sweets! Alexander (my 11yo) wanted brownies on Sunday. So, we made them together! I mixed the wet ingrediants and measured the dry, while he melted half of the chocolate chips. I love cooking with my kids! It's always messier, but they feel so proud of what they have "made" and the memories we make are more then worth that price. I hope you enjoy these brownies and maybe have some lovely memories with it in a few years too!
Double Decadent Browies (with oatmeal) Recipe
Ingredients:
1 c. sugar2/3 c. (1 stick & 3 tbsp.) butter, softened
2 eggs
1 tsp. vanilla
1 (12 oz.) pkg. (2 c.) semi-sweet chocolate morsels, divided (Sometimes I add a 1/2c of milk chocolate chips.)
1 1/4 c. all-purpose flour
1 c. Quaker oats (Quick if you don't like the texture of oats or Old Fashioned if you do, uncooked)
1 tsp. baking powder
Heat oven to 350 degrees.
Lightly grease 13x9 inch baking pan.
Melt 1 cup of morsels in the microwave by putting it in for 20-30 seconds, stir and repeat until they are melted smooth.
Beat sugar, butter, eggs and vanilla until smooth.
Add melted morsels, mix well.
Add flour, oats, baking powder, remaining 1 cup morsels, mixing well.
Spread into prepared pan.
Bake 25 to 30 minutes.
Cool & cut.
