Chocolate Fudge Cake



This is my mama's favorite cake for me to make for her birthday!  (My husband often requests it too.)  I had some friends over today and it was a good oppertunity to make it and share with them and you!  I hope you love it as much as our family does.  Happy baking!

Chocolate Fudge Cake!


2 cups sugar
2 cups flour
3/4 cups Cocoa
2 tsp Baking Powder
2 tsp Baking Soda
1 1/4 tsp Salt
2 eggs
1 cup milk
1/3 cup of vegetable oil
1/4 cup applesauce
1 Tbs Vanilla
1 cup of boiling water

Directions:
Heat oven to 350°F. Grease and flour two 9-inch round baking pans or 3 8-inch.
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Melt the butter in the mil on the stove or in the microwave. Add eggs, milk & butter, and vanilla to the dry ingredients, until everything is well combined. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with Silky Chocolate Frosting. 11 to 14 servings.
VARIATIONS:
ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.
BUNDT CAKE: Grease and flour 12-cup fluted tube pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.
CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.


Silky Chocolate Icing:
3 sticks of butter at room temperature
1 lb (4 cups) powdered sugar
1/2 cup of Cocoa
3 Tbs of milk
1 Tbs of Vanilla
1/2 Tsp salt

Directions:
With an electric mixer blend all the ingredients together until smooth.  Ice your cake!

  1. I just have to say that Charlies cakes are the BEST!!! No joke. If you don't believe me, just ask the person who paid her $100 for her pecan pie. Someone who bakes a $100 pie can't be all that bad at cakes. But seriously, the cakes rock! Now where is my Sunshine Cake?
